Pig Chitterlings with Fresh Chestnut and Lotus Root Soup


Lotus Root Soup

Ingredients:
300g   fresh chestnut
600g   lotus root
600g   pig’s knuckles
300g   pig’s intestines
3   dried honey dates
2,500ml   water

little   garlic
1 slice   ginger
little   salt

Directions:
1.Wash chestnut and honey dates. Peel and wash lotus roots, set aside.
2.Wash the pork, scald in boiling water and drain.
3.Push a clove of garlic through the pig’s intestines from one end to another to remove the dirty substances. Scald with a slice of ginger in boiling water. Remove and drain.
4.Pour water into the pot, add all the ingredients. Bring to a boil and then simmer for 2 hours.
5.Season with salt.
