Sauteed Prawns in Tomato Sauce

Ingredients :
300g   Medium sized prawn
75g   Straw mushrooms
2 pcs   Tomatoes(wedged)
1 cup   Stock
2cloves   Garlic(sliced)

2slices   Ginger
1   Celery(short sticks)

Seasoning :
1 tsp   Chicken powder
1/4 cup   Ketchup
2 tbsp   Rice vinegar
2 tbsp   Sugar
4 pcs   Haw flakes
1 tsp   Garlic(minced)
1 tsp   Chili(minced)

1.Trim prawns, wash thoroughly, then pat dry. Parboil in oil, set aside.
2.Cut straw mushrooms in half. Blanch in boiling water, rinse in cold water, then strain.
3. Heat some oil in a wok. Add in ginger and garlic, stir-fry until fragrant. Put in straw mushrooms and tomatoes, stir-fry thoroughly.
4. Pour in stock and seasonings, bring to a boil, then add in prawns and celery. Serve immediately in wok.

Spinach and Mushroom Pizza

250g   pizza dough
200ml   pizza tomato sauces
little   vegetable oil


250g   grated pizza cheese
80g   whole garlic
10g   chopped garlic
300g   spinach leave
120g   button mushroom(sliced)
20g   olive oil

Seasoning :
little   pepper
little   salt

1.Preheat an oven until temperature is up to 220℃.
2.Put spinach leave into boiling water to cook for 1/2 minute. Take out immediately and immerse the leave into iced water until cool down, strain. In a pan, fry minced garlic with little olive oil and return the leave to stir-fry for 2 minutes. Set aside.
3.Skin the whole garlic with much oil for which should cover it. Transfer the garlic to a preheated oven and bake at 220℃ for 20 minutes. Or pour cold oil in the pan and deep-fry it for 2 minutes at low heat. Strain and set aside.
4. Roll out the pizza dough to a diameter of 30 cm round. Prick the pizza base with a fork and spread the tomato sauce out the base.
5. Place one of the third of grated cheese, spinach leave, deep-fried garlic and button mushroom slices on the base. Top with two of the third of cheese on it. Transfer the pizza to the oven and bake for 15 minutes. Season and serve.

Sweet and Sour Crisp Egg Twists

150g   Shanghai dumpling wrapping
1 tsp   garlic
50g   cherry tomatoes
100g   pineapple dices
50g   green bell pepper

50g   red bell pepper
50g   pickling onions

Tomato Sauce
ketchup 1/3 cup
white vinegar 50g
water 50g
terriyaki sauce 50g
dark soy sauce 2 tsps
brown sugar 5 tbsps
salt 1/2 tsp

1.Wash the cherry tomatoes, green bell pepper, red bell pepper and pickling onions and then cut them into dices. Set aside.
2.Mix the tomato sauce ingredients thoroughly. Put some oil in a heated frying-pan, add minced garlic and saute until aromatic. Add pickling onions, green and red bell peppers and cherry tomatoes, pour in the tomato sauce ingredients and bring it to a boil. Add pineapple dices and stir thoroughly.
3.Cut the dumpling wrappings into long pieces, stack 2 or 3 slices together in a group and deep-fry in hot oil until golden brown. Take it out, drain out excess oil and then place on a plate. Serve it with the tomato sauce.

Shrimp Pizza

Shrimp Pizza

300g   pizza dough
250 ml   pizza tomato sauces
250g   grated pizza cheese
300g   fresh shrimp meat
30g   sliced garlic

50g   sliced onion
20g   chopped fresh dill
60g   anchovies
30g   olive oil
little   salt & pepper

1.Preheat an oven at temperature of 220℃.
2.Shell the shrimps and remove its intestine. Heat a pan with olive oil and slice garlic, add the shrimps to cook until medium with seasonings. Dish and set aside.
3.Roll out the dough to a diameter of 30cm round. Prick with a fork and spread the tomato sauce out the pizza base.
4.Put one of the third of cheese on the base. Then place medium shrimps and the remaining part of cheese on it again. Top with anchovies and sliced onion on the base.
5.Transfer the pizza to the preheated oven to bake for 15 minutes. Decorate with chopped fresh dill after being done.

Pork Tenderloins with Tomato Sauce

Pork Tenderloins with Tomato Sauce

300g   pork tenderloin
1/2 cup   onion shreds
1 cup   shredded turnip
1/2 cup   shredded carrot
1/3 cup   flour

Seasonings 1
salt 1/2 tsp
pepper little
wine 1 tbsp
water 1/4 cup

Seasonings 2
tomato paste 1 tbsp
salt 1/3 tsp
sugar 1/2 tsp
water1 1/2 cups

1.Cut tenderloin to 2 cm thick pieces, pound it with the back of a cleaver. Mix with seasonings(1), marinate for 1 hour.
2.Coat pork loin with flour, shake off the excess powder. Pan sear both sides. Remove when golden brown.
3.Add 1 tbsp of oil in, saute onion, add carrot and turnip in, saute for a while. Add seasonings(2), bring to boil. Add pork, simmer over low heat until done(about 4 to 5 minutes).
4.Thicken the sauce over high heat. Remove to a plate, serve with cooked rice or spaghetti.

Sweet and Sour Fish Fillet with Fruit

300g   fish fillet
150g   cantaloupe melon
2 pcs   kiwi fruit
1/2 pc   egg
3 tbsps   corn flour

1 tsp   ginger juice, wine each
1/4 tsp   salt
little   pepper
each 2 tbsps   tomato sauce, sugar
1 tbsp   brown vinegar
1/2 tbsp    white vinegar
each 1 tsp   light soy sauce, corn flour
little   sesame oil
4 tbsps   water

1.Clean and dry fish fillet, cut into thick strips, add marinade, mix well and marinate for 30 minutes.
2.Prepare sauce ingredients and mix well.
3.Coat fish fillet with beaten egg and corn flour.
4.Heat 2 to 3 tbsps oil in a frying pan, pan fry fish fillet until cooked and golden brown, drain and dish up on a piece of kitchen paper to absorb excess oil.
5.Peel kiwi and cantaloupe melon, cut into thick strips.
6.Cook sauce and stir well, turn off the heat and stir in fish fillet, kiwi and cantaloupe melon strips. Mix well and dish up.


Fried Rice with Mackerel in Tomato Sauce

Fried Rice with Mackerel in Tomato Sauce

1 bowl cooked rice
1/3 can mackerel in tomato sauce
1/2 tsp minced ginger
1 tbsp mixed beans
1 tbsp chopped green onion
1 egg

3 tbsp oil
1/2 tsp soy sauce
little black pepper & salt

1.Whisk egg, set aside. Place mackerel in tomato sauce into a bowl, press with tablespoon to small bites.
2.Heat wok, add oil, pour in the egg and stir-fry quickly until the egg set and separated.
3.Add cooked rice, minced ginger, stir-fry until the rice separated. Add mackerel, beans, green onion, pepper, salt and soy sauce, stir-fry for 1 minute. Serve.
